When deciding which potatoes to grow, one of the ways I decide is to select by what type of potatoes I enjoy eating and find cook well.
Different types of potatoes cook well in different ways, some are better roasted while others make great salad potatoes, yet others are good for using for baking potatoes.
As a simple guide waxy type potatoes are usually great for salads, and floury type potatoes are good for mash and for baking.
Seed potatoes that are good for salads are often marked up as such, with a bit of research you can find the names of seed potatoes that are good for different types of cooking.
So far I have planted International Kidney (the seed potatoes that are 'Jersey Royal' style potatoes and Charlotte which is a good salad potato an one that I grew and enjoyed last year.
There are some types of potatoes that are prone to falling apart if over cooked and some that discolour quickly after cooking. I think all of this makes a bit of research into the different types of potato varieties on sale worthwhile.
